A curry pizza story of red curry seasoning base
I had some red curry seasoning base, can of Tuna, mix of various veggies that I had to use up in the fridge and I was in need of pizza lunch, but not from a restaurant. I found this awesome Italian pizza dough recipe on Youtube, that I could make easily and decided to give it a try with my own curry twist.
Italian Pizza Dough
Prep time : 10 minutes ( using food processor )
- 6 cups of bread flour
- 2 tsp of salt
- 1 tsp of active dry yeast
- Water
I went ahead and blended all the ingredient and kneaded the dough about 45 seconds in food processor .
while the dough rises until double in size, which was about two hours, I prepared the sauce and toppings.
Sauce
Prep time : half an hour
I made a smooth and Tuna curry flavored sauce by blending Tuna, curry powders and coconut cream.
- One can of yellow fin tuna in oil
- One teaspoon of black curry powder
- One teaspoon of red curry paste
- One tablespoon of coconut cream
Toppings
I also made a coconut sambal by mixing curry seasoning base and other ingredients by hand until well combined like mom used to do. Also I added finely chopped vegetable to my sambal and finished it with lime juice. It was perfect for two pizzas.
- Cup of scraped coconut
- Tablespoon of red curry seasoning
- Teaspoon of cayenne pepper
- Teaspoon of black pepper
- Juice of a lime
- Sliced red onion
Optional toppings
- Finely chopped red and yellow bell pepper
- Handful of Arugula
- BBQ pork ribs (optional)
- finely sliced red onions
Last but not least I sliced fresh mozzarella cheese and laid out ready to go.
By now the dough had risen to double. I turned it to oiled surface and divided in to eight dough balls. Since I was only making two pizzas, I froze remaining six dough balls in zip tight bags.
In a oiled well seasoned cast iron skillet, I formed the pizza bread by pushing and pulling the dough to corners. I made sure I saved as much air as possible that was inside and push it towards corners. Oven was set to pre heat at 460 degrees Fahrenheit. I covered the pizza bread with a cling film and let it rise another two hours . Once I was happy with how well it has risen, I went ahead to add my toppings. After spreading a thin layer of sauce and adding my toppings, I cooked the pizza in over for 15 to 20 minuets and cheese is melted and bread is crusty.
I served my pizza creation with drizzle of olive oil on top. That was one flavorful lunch and my family loved it ! I hope you will too.
