Chanko Nabe (Sumo Wrestler’s Hot Pot) — RecipeTin Japan

I am so glad I found this simple yet delicious hot pot recipe. It is traditionally made by sumo wrestlers for them to enable healthier weight gain, so it has lot of meat and meatballs added to it to bring up the calorific value. But this recipe is so versatile you can easily customize it to suit your dietary needs. It can be your pal trying to add as many vegetables to your diet while flavor profile intact. That is exactly what I did last weekend. I made a big batch of Chanko nabe plant based version and some wholesome Rye whole wheat breads and vegan meat. Yes ! I am mostly exited about Vegan meat in my chanko bringing up the protein content without brining up calories and saturated fat much.
