Ingredients
  

  • 2 bone in skin on chicken breast
For the sauce
  • 3 tbsp Red curry powder
  • 1 tsp tomato paste
  • 2 tbsp oil
  • 1/4 cup water
For marinade
  • 1 tsp vinegar
  • 2 tsp yellow curry powder
  • 1 tbsp dark soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp freshly crushed black pepper
  • 2 tbsp Salt or according to taste
  • 3 cloves of garlic

Equipment

  • 1 Air fryer

Method
 

  1. Mix yellow curry powder, vinegar, soy sauce, garlic, salt, pepper, and Worcestershire sauce together. Pour over chicken and marinade for one hour to overnight.
  2. Mix red curry powder, tomato paste, oil, and water to make the sauce. Optionally add a little salt and brown sugar to balance flavors if you prefer.
  3. brush the sauce over the chicken and Air fry for 360 degrees for 20 minutes or until internal temperature reads 150 Fahrenheit. Open the Air fryer and brush the chicken breast with additional dose of sauce halfway.
  4. Cover the Chicken breast and allow to stand for 15 minutes before slicing.
