Ground Beef Curry

Ingredients
  

  • 2 lb ground beef
  • 3 tbsp yellow curry powder
  • 2 tbsp duck curry powder
  • 1 tbsp fennel ground
  • 1 tbsp black pepper
  • 1 tbsp Salt
  • 2 tbsp Spanish paprika
  • 3 Onions finely diced
  • 2 Tomatoes chopped
  • 1 Inch of lemongrass
  • 3 Ginger garlic
  • 3 Green chili
  • 5 Curry leaves
  • 2 tbsp Toddy vinegar
  • 1 inch piece of ginger
  • 2 tablespoons thick coconut cream

Equipment

  • 1 heavy bottomed skillet

Method
 

  1. Heat the pan on medium high and brown the ground beef. break it apart as it browns. Remove the browned meat into a separate bowl and drain the fat off leaving only 3 tablespoons of fat to cook the sauce.
  2. Add onions and fry until slightly caramelized.
  3. Add ginger and garlic and fry for few more seconds.
  4. Add green chili, lemongrass and chopped tomatoes
  5. Add the curry seasonings, salt, pepper, fennel, paprika and let every thing cook down on low heat for 5 minutes.
  6. Add browned ground beef, vinegar and splash of water. keep simmering for 30 to 35 minutes giving it only little splash of water if dries out. Scrape the bottom to prevent the spices from burning.
  7. Add coconut cream and simmer until thickens up to your desire. give it a taste and adjust salt and pepper to your taste.
