Seitan Curry Sri Lankan style

Plant based meat curry Sri Lankan style

Ingredients
  

  • 2 cups of seitan or any plant based meat of your choice cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 onion finely chopped
  • 3 cloves of garlic minced
  • 1 inch of ginger peeled and minced
  • 2 green chilies chopped
  • 3 tablespoon of Sri Lankan red curry powder
  • 1/2 teaspoon of yellow curry powder
  • 1/2 tsp of black curry powder
  • 1 cinnamon stick
  • 2 cardamom pods
  • 2 cloves
  • 1 can of coconut milk
  • 1 cup of water
  • Salt to taste
  • Chopped fresh curry leaves for garnish

Instructions
 

  • Heat the vegetable oil in a large pan over medium heat. Add the onions, garlic, ginger, and green chilies and sauté for about 3-4 minutes until the onions are translucent.
  • Add all the spices - Sri Lankan curry powder, turmeric powder, cumin powder, coriander powder, and fennel powder. Stir well and cook for another 2 minutes.
  • Add plant meat pieces and stir to coat them with the spice mixture. Cook for another 5 minutes.
  • Pour in the coconut milk and water. Add the cinnamon stick, cardamom pods, and cloves. Stir everything together and bring the mixture to a boil.
  • Lower the heat and let the curry simmer for 25 minutes until the plant meat pieces are soft, they absorb the flavors, and the curry has thickened.
  • Taste and adjust the salt to your liking
  • Garnish with chopped fresh coriander and serve hot with rice or bread.
