Heat the vegetable oil in a large pan over medium heat. Add the onions, garlic, ginger, and green chilies and sauté for about 3-4 minutes until the onions are translucent.
Add all the spices - Sri Lankan curry powder, turmeric powder, cumin powder, coriander powder, and fennel powder. Stir well and cook for another 2 minutes.
Add plant meat pieces and stir to coat them with the spice mixture. Cook for another 5 minutes.
Pour in the coconut milk and water. Add the cinnamon stick, cardamom pods, and cloves. Stir everything together and bring the mixture to a boil.
Lower the heat and let the curry simmer for 25 minutes until the plant meat pieces are soft, they absorb the flavors, and the curry has thickened.
Taste and adjust the salt to your liking
Garnish with chopped fresh coriander and serve hot with rice or bread.
