Some Good News with Breakfast ….

End of the pandemic stay at home is in sight for us. Last year has been a tough one. It tested the last ounce of strength I had in my heart. We have been apart from our loved ones, constantly worrying about their safety. We were made to school from home adding further burden to the already filled plate. However, It forced me to think again find ways to solace. Much more women were forced to dropped out from workforce than men and for many more it pushed the career goals further away. Slowly but steadily, it is bringing about permanent changes, I hope will be welcomed. It brought lots of changes in my life too, I was using every ounce of strength to help uplift my kids and husband and make their life easier and try to work on new project that I was falling behind on. I am an avid tea lover and tea drinker. The taste of steaming milk tea in early in the morning while watching my mom make breakfast was one of the first best memories that pops into my mind when I think about my childhood. I must have been four or five years old then. I guess you could call that I grew up on tea. Right along with the tea goes teatime snack. Teatime without a good spicy teatime snack is at least for me very dull. May it be a ginger snap cookie, spicy tuna sandwich, peppery veg roti or a good old masala Vada. I feel like it is never enough how many times I make it. it is so delicious, elegant, and simple and at the same time so versatile. Do you like eating chili? Here is a different way !

The Spicy Vegetable Chili Feels like I have been making chili since like forever. I have made so many of them I cannot even keep a count. because you know? it is one of the best comfort foods that not only amazing in the winter but in summer too. May it be the bowl of chili topped with sour cream and bread sprinkled cheddar on top. Over your favorite pasta or to make Nachos with it just could not get any better. Over the years I have made many versions of this dish, with different beans, some with white beans, garbanzo beans or red kidney beans and different meat and veggie combinations. It comes out so much nuttier and flavorful with red kidney beans. I guess you could say I have my favorite. Red kidney beans are so full flavored, and it look gorgeous whenever you cook with it.
