Perfect Ground Beef Curry for Tacos or Sloppy Joes

Ground beef in a curry is really a convenient meal prep option that is surprisingly flavorful. Ground beef curry-based meals are among my favorite dishes that my kids reach out to every time. Sloppy joes, tacos mini pizzas with curry sauce, spaghetti, or ground beef casserole, among their favorite dinners.

I love making ground beef stir fries because it cooks fast, is perfect in slow cooker meals and super delicious in lettuce wraps. I have made ground beef for sloppy joes following some good recipes. I wanted to try making a ground beef curry with my own seasoning base. I wanted to experiment with yellow curry seasoning and duck curry seasoning to find out what worked better. So, how did my ground beef curry with Sri Lankan flavors turn out? Simply perfect. Spicy yet not overpowering. Aromatic and flavorful with just enough sauce to moisten the meat. A keeper.

But before we get to details on how to make ground beef curry, I have a little introduction to make. What cut of meat is best for ground beef curry

I often cook beef curry recipes and beef curries from beef chuck and ribs. Chuck stands well for curries that need long cooking times. Although ground beef comes from the beef chuck, I had not really thought of using ground beef to make a curry up until now. Then I realized how perfect the ground beef would be for making curries because it absorbs flavors really well and cooks much faster on the stovetop and It had to be the best and easiest other alternative to long and slow beef curry. A good ground beef curry is just a little bit of a restaurant style meal at home from a humble ingredient that is always available in the pantry freezer.

What flavors work best in a ground beef curry?

Ground beef curry is a great beginners curry you can make without any fear of things going wrong. Let us face it, ground beef tastes great in anything and even just with salt and pepper. But I am going to elevate things with mild flavor and make it more aromatic with very fragrant spices and herbs like lemongrass, Indian basil, and mace. I am going to use my own duck curry seasoning that I have come to love so much. But if you do not want to make your own duck curry powder from scratch, use a bit of garam masala and any red curry powder and it will give you a little different but a good curry too.

Another curry seasoning you can use is yellow curry powder and a little bit of paprika to keep things even milder. I am including my recipe links on how to make duck curry seasoning powder because making this with duck curry seasoning is so much worth the effort.

What kind dinners can you make with ground beef curry ?

A curry made from good quality grass fed ground beef is necessary for a great tasting curry that will elevate the flavor profile of your dinner to next level. I always buy mine from the local butcher unfrozen and cook it right away.

Also, a good, flavored curry needs the right amount of fat to liquid ratio in the sauce. Fat is essential to carry the flavors of spices but having too much fat in the sauce is off-putting and will also make your curry change its flavor to too strong in keeping. If you have a fatty cut of meat keep the spices and herbs to low and go easy with cream or coconut milk when making ground beef curry. Also leave the pan sauce of the ground beef curry to scant amount sauce, just a moisture to coat the beef.

Ground Beef Curry

Equipment

  • 1 heavy bottomed skillet

Ingredients
  

  • 2 lb ground beef
  • 3 tbsp yellow curry powder
  • 2 tbsp duck curry powder
  • 1 tbsp fennel ground
  • 1 tbsp black pepper
  • 1 tbsp Salt
  • 2 tbsp Spanish paprika
  • 3 Onions finely diced
  • 2 Tomatoes chopped
  • 1 Inch of lemongrass
  • 3 Ginger garlic
  • 3 Green chili
  • 5 Curry leaves
  • 2 tbsp Toddy vinegar
  • 1 inch piece of ginger
  • 2 tablespoons thick coconut cream

Instructions
 

  • Heat the pan on medium high and brown the ground beef. break it apart as it browns. Remove the browned meat into a separate bowl and drain the fat off leaving only 3 tablespoons of fat to cook the sauce.
  • Add onions and fry until slightly caramelized.
  • Add ginger and garlic and fry for few more seconds.
  • Add green chili, lemongrass and chopped tomatoes
  • Add the curry seasonings, salt, pepper, fennel, paprika and let every thing cook down on low heat for 5 minutes.
  • Add browned ground beef, vinegar and splash of water. keep simmering for 30 to 35 minutes giving it only little splash of water if dries out. Scrape the bottom to prevent the spices from burning.
  • Add coconut cream and simmer until thickens up to your desire. give it a taste and adjust salt and pepper to your taste.
