I am an avid tea lover and tea drinker. The taste of steaming milk tea in early in the morning while watching my mom make breakfast was one of the first best memories that pops into my mind when I think about my childhood. I must have been four or five years old then. I guess you could call that I grew up on tea. Right along with the tea goes teatime snack. Teatime without a good spicy teatime snack is at least for me very dull. May it be a ginger snap cookie, spicy tuna sandwich, peppery veg roti or a good old masala Vada. Now, if any of that sounds gibberish to you let me enlighten. With a recipe for a snack that you can whip up quickly and cook in an air fryer superfast. Not only this Vada inspired snack crackers are healthy with wholesome ingredients, but they are also a clean snack without all that oil in it from deep frying. This recipe is going to yield you 40 crackers.
Here is what you will need
2 cups of boiled chickpea (or canned drained and rinsed)
2 cups of red masoor lentils soaked
1 cup or enough breadcrumbs to make a dough
One can of pink salmon drained
1 cup of wheat gluten
Cumin half a teaspoon
Coriander 2 tsp
Turmeric 1 tsp
Salt to taste
Black pepper to taste
Paprika to taste
Red pepper to taste
Crushed pepper flakes 1 tsp
Fish sauce 1 tsp
Dark soy sauce2 tsp
One red onion
2 green chilli peppers
Handful of finely chopped baby spinach
Blend seasonings, lentil, chickpeas, onions, peppers, and canned salmon into a smooth paste (relatively smoother).
Add spinach, wheat gluten and breadcrumbs to make a dough. Adjust the salt and pepper to your desired level if you are using unseasoned breadcrumbs.
Make into little balls and flatten them out with lightly oiled hands. Arrange them on a single layer in your air fryer and cook in 350 degree for 25 minutes turning once until lightly golden and crispy. work in batches so that they cook evenly.
Enjoy as a teatime snack or a light lunch with your favorite dip and a salad.
